fter a 5 day cold soak, the must was allowed to warm and yeast D254 was added. Fermentation was in stainless steel tanks for 8-10 days, at 76-88 deg F, with pump over twice a day. Malo-lactic fermentation was initiated at the end of primary fermentation, and completed.
